While this is going on, a mesh basket inside the juicer is spinning to create centrifugal force. This separates the juice from the pulp – juice goes one way, pulp the other. It works like a washing machine spin cycle where water is spun or ‘extracted’ from the clothes, leaving them damp, but not dripping.
During this process, the fruits and vegetables become exposed to air at a higher rate compared to a masticating juicer. There is also a lot more friction that can increase the temperature.
As a result, oxidation will occur which causes nutrients to deteriorate. But, if you are drinking your juice soon after making it, the change in nutrient value (versus a masticating juicer) will be minimal.
